Ingredients:

• 250 g mimen bakery mix
• 250 g lukewarm non-dairy milk
• 20 g powdered sugar
• 7 g honey
• 50 g vegan butter
• 15 g fresh yeast
• 10 g psyllium
• 5 g vanilla flavour
• 5 g rum flavour
• ½ lemon peel
• 500 g oil (for baking)

Preparation:
Measure out the vegan milk, honey and yeast into a bowl, give it a stir and let it stand until foamy. Stir the flour, the confectioners’ sugar and the psyllium fiber together, crumble the mixture with the soft vegan butter then pour it into the bowl with the yeast. Add the lemon zest and the rum flavour, knead the dough until smooth, then cover and let it rest for about 60 minutes. Knead the dough again and roll it out until it is 2-finger-thick then cut it up with a dough cutter arbitrarily. Cover and let it rest again for about 20 minutes. Under a lid, fry in hot oil until golden brown on both sides.
