If you want to make a festive bread with a perfectly crispy crust and a substantial but really soft crumb, feel free to mix together the following flour mixes: the it’s us Miklos’ universal, the it’s us Miklos’ universal mix plus and the Kate’s low carb sourdough bread mix.
The dough contains 710 g flour and the baked bread weighs more than 1200 g.
Ingredients:
●620 g lukewarm water
●20 g sugar
●40 g fresh yeast
●210 g It’s us miklos’ universal plus flour mix
●300 g It’s us miklos’ universal flour mix
●200 g kate’s low carb sourdough flour mix
●15 g salt
●20 g oil

●Measure the lukewarm water and the sugar into a mixing bowl, cumble the yeast into it, add the It’s us miklos’ universal plus flour mix and mix until lump-free. Let it rest at room temperature for 10 minutes.
●Add the other two flour mixes and the salt, then, while adding the oil, knead a homogeneous, elastic dough .
●Leave it to rise on room temperature for about 30 minutes.
●Knead the dough again on a surface sprinkled with rice flour, shape it, place it into a bread loaf baking pan lined with parchment paper.  Incise the top as desired, then put a lid on it and let it rise for about 60 minutes
●Bake the bread in a preheated oven at 210 degrees for about 40 minutes. Then, with the help of the parchment paper, place it on the oven rack and bake for another 20 minutes.
●Let it cool on a wire rack.
