You can make a rapid dinner from our it’s us kate’s low carb salty universal mix, just read the recipe on its bag and make fantastic pizza rolls from it.  The leavening time is short, the dough can easily be shaped after 15 min resting. It’s not sticky, the outcome in spite of that is fantastically soft. The edge of the giant pizza roll is finely crispy, the inside is super soft.  You can serve it with some salad, or pack it into the lunchbox next day.
Dough:
●75 g kate’s low carb salty universal flour mix
●40 g lukewarm water
●5 g freshly squeezed lemon juice
●1 egg, size “M”
●5 g olive oil
●1/2 tsp oregano
●1 pinch of garlic powder
Tomato sauce:
●80 g tomato sauce
●1 tsp oregano
●1 large pinch of garlic powder
●1 pinch of salt
On top:
● grated cheese / vegan cheese to taste
●Measure the liquid ingredients into a mixing bowl and mix them well
●Add the flour and the spices and with the help of a spoon, mix the batter together. Let it rest on room temperature for 15 mins. By the end of resting time, we get a dough that can be easily shaped.
●During the resting time of the pizza, we can make the sauce and grate the cheese.
●In a bowl, mix together all the ingredients of the tomato sauce.
●After resting, roll out the dough into a one and a half finger wide, thin, long strip. Spread it with the sauce, sprinkle it with grated cheese and roll it up carefully along its entire length.
●Place the large roll into a baking tray lined with parchment paper, sprinkle with cheese and place it into the oven, preheated to 190°C. Bake it for approx. 30 mins.
Enjoy!
