Ingredients:

• 250 g mimen bakery mix
• 250 g lukewarm non-dairy milk
• 20 g powdered sugar
• 7 g honey
• 50 g vegan butter
• 15 g fresh yeast
• 10 g psyllium
• 5 g vanilla flavour
• 5 g rum flavour
• ½ lemon peel
• 500 g oil (for baking)

Preparation:

  • Measure out the vegan milk, honey and yeast into a bowl, give it a stir and let it stand until foamy.
  • Stir the flour, the confectioners’ sugar and the psyllium fiber together, crumble the mixture with the soft vegan butter then pour it into the bowl with the yeast.
  • Add the lemon zest and the rum flavour, knead the dough until smooth, then cover and let it rest for about 60 minutes.
  • Knead the dough again and roll it out until it is 2-finger-thick then cut it up with a dough cutter arbitrarily.
  • Cover and let it rest again for about 20 minutes.
  • Under a lid, fry in hot oil until golden brown on both sides.
