With the it’s us kate’s low carb mix sourdough bread flour mix rolls, bread or buns can be baked without adding yeast. This flour-mix contains slow-release gluten-free grains and is quite rich in fibres. However, due to its fibre content, it binds quite a lot of water, so the inside retains moisture which contributes to the fact that you can enjoy perfectly soft bread even after two days.

How to make a soft and fluffy bread:
1. Mix the liquid ingredients well.
2. The dough doesn’t need to be knead for a long time, it’s enough to be worked till it’s smooth and homogenic.
3. Before shaping, roll the dough out, then roll it up – this is very good for the structure of the bread.
4. Flatten the shaped bread to the height of 5 cm so that the liquid in it can evaporate on a larger surface and its shape after baking will also be nicer.
5. Before baking, it is important  to incise the top with a sharp knife or blade deeply – this also helps the water to evaporate.
6. If you bake rolls or buns, bake them for approx. 30 minutes. From this quantity of dough 3 rolls or buns can be made.

Ingredients:

●230 g sparkling water
●12 g freshly squeezed lemon
●8 g olive oil
●210 g it’s us kate’s low carb mix sourdough bread flour mix

On top:
●1 tsp it’s us kate’s low carb mix sourdough bread flour mix

Preparation:

●In a mixing bowl combine the sparkling water, the lemon juice and the olive oil.
●Add the flour mix and with fast moves, knead a smooth, homogenic dough.
●Let the dough rest on room temperature.
●After 10 minutes, knead the dough again then roll it out into a 0,5 thin rectangle.
●Roll the rectangle up, form a bread or loaf from it, then flatten it to 5 cm thick.
●Sprinkle its top with some it’s us kate’s low carb mix sourdough bread flour mix and decorate as you like it. It is important to incise the top deeply with a sharp knife or blade.
●Place it on a baking tray lined with parchment paper and bake it in an oven preheated to 180 ℃ for approx. 60 minutes.
●Let the baked bread cool completely on a wire rack.
