You can make perfectly roll-able, soft and thin tortilla sheets in a low carb version from the “it’s us Kate’s sourdough bread low carb mix”. From these sheets burrito, quesadilla or enchilada can be made as well.
It is very easy to prepare, before rolling, the work surface should be sprinkled thoroughly with rice flour, so that the sheets can be rolled out much thinner
From this quantity 4 tortilla sheets can be made:
●120 g it’s us kate’s sourdough bread low carb mix
●100 g water
●20 g olive oil
●4 g freshly squeezed lemon juice
●Pour the liquid ingredients into a bowl, then add the flour mix and knead an elastic dough.
●Divide the dough into 4 equal parts, form buns from each and let them rest for 5 minutes.
●Roll out the buns on a work surface sprinkled with rice flour as thin as you can.
●Bake both sides of the sheets in a hot, fat-free pan for about 0,5 min.
●Cover the baked tortilla sheets with a plate, so they remain roll-able when they are cold.
●Serve them with your favourite vegetables, roast meat.
