Brioche is one of our favourite childhood pastries. It is perfect for breakfast with a large cup of hot cocoa and the children are sure to be happy as well when they find it in their lunch box.
Its dough has been made from the kate’s low carb mix sordough bread mix flour mixture, easy to form and doesn’t need to be kneaded for a long time.
You can make a larger portion from the dough. If you do so, just put the one by one into small plastic bags, put them into the fridge and you can make fresh brioche later anytime again.
Ingredients:
●200 g milk or plant based drink
●20 g freshly squeezed lemon juice
●1 egg, size “M”
●60 g melted margarine
●250 g kate’s low carb mix sordough bread mix flour mixture
●60 g powdered sugar / erythritol
Onto its top:
●1 egg white (of a medium-sized egg)
●cinnamon sugar (as you like it)
Method:
●Measure the milk, the lemon juice, the egg yolk and the melted margarine in a large bowl and mix them well.
●Add the flour mixture and the powdered sugar and knead an elastic dough from the mixture.
●Let the dough rest in room temperature for about 10 minutes.
●Divide it into 6 equal parts and shape them into buns.
●Roll 20-25 cm strips from the 6 buns, then roll them up one by one.
●Place them into a baking pan lined with parchment paper, brush their top with a lightly beaten egg white and sprinkle them with cinnamon sugar.
●Bake it in an oven preheated to 180°C for about 25-30 minutes.
