Childhood tastes, smells… For me, that’s what Emperor’s mess (or its original name: Kaiserschmarrn) means. It doesn’t matter, that you are on a gluten-free diet, fortunately you don’t need to go without the traditional taste, you can easily substitute semolina with rice grits.

Ingredients:

●30 g it’s us naturbit rice flour
●100 g it’s us naturbit rice grits
●220 g milk / plant-based drink
●1 tbsp vanille flavouring
●3 db eggs, size “M”
●100 g granulated sugar
●1/2 db grated rind of a lemon
●50 g butter or margarine

For serving:
●powdered sugar to taste
●jam or marmalade to taste

Preparation:

●In a bowl, mix the rice flour with the rice grits, then pour the milk on them. Stir thoroughly and let the mixture rest for an hour, so that the rice grits absorb moisture.
●After an hour, whisk the egg yolks and sugar together until it is thick and foamy, then add to the milky batter.
●Beat the whites of the eggs with a pinch of salt and grated lemon peel into a stiff foam, then mix the foam into the mass.
●In a pan, melt the butter or margarine then pour the batter into it. Stir continously with a spatula or wooden spoon until it falls apart into small pieces or crumbs. Depending on the strength of the stove, it can be prepared for up to 30 minutes.
●After it is ready, leave it rest for 5 minutes then serve sprinkled with powdered sugar and add some kind of jam or marmalade, or fruit syrup on top.
