Preparation:

  • Separate the eggs, whisk the egg white to stiff peaks and set aside.
  • In a large bowl, combine the egg yolks, the sugar, the oil and the water, than add the flour mix and stir the batter until lump free.
  • Then gently fold in the egg whites.
  • Preheat the waffle iron, brush with a little oil.
  • Ladle in enough batter to just cover the surface and cook it until the waffles are golden brown and crisp.
  • Place the fried waffles on a wire rack. If you like your waffles crispy, then never put them hot on one another.
  • Serve them according to taste: with some fruits, whipped cream, jam or custard.
