Ingredients for 4 servings:

  • 40 dkg penne pasta
  • 30 dkg broccoli
  • 40 dkg salmon
  • 20 dkg green beans
  • 8 dkg sliced, roasted almonds
  • 2 dl cooking cream (can be vegetable cream)
  • 1 onion
  • 4 cloves garlic
  • 1 teaspoon olive oil or butter
  • ½ lemon juice
  • salt
  • freshly ground pepper mix

Preparation:

  • Cut the broccoli and green beans into small pieces.
  • Place them in boiling water and blanch for a few minutes, then cool in ice-cold water, drain, set aside.
  • Chop the onion and garlic.
  • Cut the salmon into 2×2 inch cubes.
  • Put the olive oil/ butter into a hot pan, toss in the onions, stir them for a few minutes.
  • Add the salmon, sprinkle it with salt and pepper.
  • Roast it for 5 minutes, then pour it over with the cream.
  • Season it with the lemon juice.
  • Stir in the cooked pasta and vegetables and serve it with the roasted almond slices.
