Ingredients:

For baking:

  • 1 tsp margarine or plant butter

Preparation:

  • Whisk all the ingredients in a bowl using a balloon whisk or an electronic hand mixer until you get a smooth, thick batter.
  • Heat a little of the margarine to 160 degrees in a non-stick frying pan.
  • Add 2 tbsp batter into the pan at a time to make small, round pancakes.
  • After 3-4 mins cooking flip the pancakes over and cook fo another 2-3 mins until golden on both sides and cooked through.
  • Serve stacked with lots of toppings of your choice (e.g. vegan butter, maple syrup and fruits).
