Ingredients for 4 servings:
- 40 dkg penne pasta
- 30 dkg broccoli
- 40 dkg salmon
- 20 dkg green beans
- 8 dkg sliced, roasted almonds
- 2 dl cooking cream (can be vegetable cream)
- 1 onion
- 4 cloves garlic
- 1 teaspoon olive oil or butter
- ½ lemon juice
- salt
- freshly ground pepper mix
Preparation:
- Cut the broccoli and green beans into small pieces.
- Place them in boiling water and blanch for a few minutes, then cool in ice-cold water, drain, set aside.
- Chop the onion and garlic.
- Cut the salmon into 2×2 inch cubes.
- Put the olive oil/ butter into a hot pan, toss in the onions, stir them for a few minutes.
- Add the salmon, sprinkle it with salt and pepper.
- Roast it for 5 minutes, then pour it over with the cream.
- Season it with the lemon juice.
- Stir in the cooked pasta and vegetables and serve it with the roasted almond slices.
