Ingredients:
Tart:
- 280 g it’s us miklos’ universal or universal plus mix flour mixture
- 190 g cold margarine
- 60 g powdered sugar
Filling:
- 250 g cottage cheese
- 250 g mascarpone
- 50 g powdered sugar
- 1 tbsp pistachio cream
On top:
- figs
- chopped pistachios
- mint leaves
Method
- Measure the flour mix, powdered sugar and margarine into a mixing bowl. Rub margarine with the flour and sugar, then knead homogenous dough. (You can use a food processor for this part)
- On a surface, sprinkled with rice flour, roll out the dough until it’s large enough to cover the edge of the tart dish.
- Place the dough into the dish, cover with a baking sheet and place beans on it (blind baking).
- Preheat the oven to 180℃ and bake the dough (with the beans) for about 15 mins. After 15 mins baking, remove the beans and bake the dough until its colour becomes golden brown.
- In a food processor, mix the ingredients of the filling until it’s homogenous.
- Let the dough of the tart cool down then pour the filling into it and smooth it down.
- Decorate the top with some figs, chopped pistachios and mint leaves.
- Serve it cooled.
